Evaluating remittance PDF extraction options

Included FineReader in a self-hosted document-AI scan for remittance PDFs. Strong OCR pedigree, but it is another processor/runtime to onboard and is the wrong default for text-layer corporate tables.

What worked
Recognized as a mature on-prem OCR option when comparing self-hosted versus SaaS readers.
What got in the way
Would still be a new component with licensing and ops cost, and it does not integrate with this journal API. Documentation-only.
